Banana Cookies


Description:
These are childhood favorites. Mom would have them hot and ready when we got off the school bus, and our friends always wanted to come to my house to help eat them! Great with a big glass of milk.

Ingredients:
2 cups flour
½ t. baking soda
1 t. salt
¾ cup butter
½ cup brown sugar
½ cup white sugar
2 eggs
1 t. vanilla
1 cup mashed bananas
1 cup chopped nuts (walnuts or pecans are great)
1 ½ cup dry oatmeal
½ cup flaked coconut

Instructions:
Sift flour, soda and salt. Cream butter and sugars; add eggs and vanilla. Add dry ingredients, mix well. Add bananas, nuts, oatmeal, and coconut. Mix well. Drop by teaspoonfuls onto ungreased baking sheet. Bake at 350⁰ for 10 minutes, or until done.

Roasted Pumpkin Seeds


Description:
This is a delicious fiber-rich snack. Use the pumpkins to make pies, cookies, and cakes, and roast the seeds for a homemade snack.

Ingredients:
2 cups raw pumpkin seeds, washed
Olive Oil Cooking Spray
pinch salt

Instructions:
Preheat the oven to 300. Spread the seeds in a single layer on a baking sheet. Spray with cooking spray, stir to coat evenly, and sprinkle with salt. Bake for 30-45 minutes, stirring occasionally to prevent sticking. Cool on pan. Store in cool dry place.

Boiled Peanuts


Description:
This is a delicious fiber-rich snack. By making these yourself, you control the amount of salt.

Ingredients:
5 pounds raw peanuts in the shell
1/3 – 1 cup salt

Instructions:
Wash the peanuts and place in large pot. Add water to cover. Add salt.
Boil for 3 hours, adding water as needed.
Taste the peanuts. If needed, add more salt. If you want softer peanuts, boil the for up to 5 hours.
