Sausage Gravy Recipe


Description:
This is my youngest brother’s signature dish. Every time we all get together as a family, he is expected to make this for breakfast at least once. Serve over freshly baked biscuits.

Ingredients:
1 pound ground sausage
1/3 cup flour
2-12 oz cans evaporated milk (NOT sweetened condensed milk)
1 cup milk, if needed
1 t. hot pepper sauce, if desired

Instructions:
In a large saucepan, brown the sausage. Don’t drain the grease, unless there is more than 1/3 cup. Sprinkle flour over sausage, stir to blend, cook 2-3 minutes over medium high heat. Add canned milk, and cook till thickened, stirring regularly. If gravy is too thick, add milk until it reaches the desired consistency. Add hot sauce, if desired.

Pesto Recipe


Description:
This fresh sauce is a great change from a red sauce. Serve it over hot pasta, or a grilled chicken breast.

Ingredients:
3 cups fresh basil leaves
2 cups chopped pine nuts
4 cloves garlic, peeled
¼ cup Parmesan cheese, grated
½ cup chicken broth
½ cup olive oil
2 T. lemon juice (to prevent browning)
Salt and pepper to taste

Instructions:
In a food processor, blend together basil leaves, nuts, garlic, and cheese. Slowly add broth and oil while food processor is still running. Add lemon juice. Add salt and pepper as needed.

Mexican Shrimp Cocktail


Description:
This is a real south-of-the-border treat! Serve it in tall glasses, or as a dip with chips. Garnish with fresh shrimp hooked over the rim of the bowl or glass for a visual treat.

Ingredients:
2 pounds shrimp, cooked, peeled and deveined
1 T. minced garlic
½ cup red onion, finely chopped
½ cup cucumber, peeled, seeded and finely chopped
1 cup tomato, peeled and finely chopped
1 ripe avocado, peeled and finely chopped
¼ c fresh cilantro, chopped
½ c Clamato
1 ½ cup Spicy V8 juice
¼ cup fresh lime juice
Tabasco to taste
Salt to taste

Instructions:
Mix all ingredients in large bowl. Cover and refrigerate 2-3 hours.

Apple Chutney


Description:
This a fantastic sauce to serve with turkey, chicken breasts, or pork chops. It really elevates a simple baked chop to something quite fantastic. Store in the refrigerator.

Ingredients:
16 apples, peeled, cored and finely chopped
1 medium onion, quartered
3 pieces (1 inch) fresh ginger, peeled
1 cup white wine vinegar
1 cup brown sugar
½ t. cinnamon
1 t. cardamom
½ t. ground nutmeg

Instructions:
In a large pan, mix all ingredients. Bring to a boil, reduce heat, and simmer, covered, for 30 minutes. Stir frequently, and add water as needed. Simmer until the apples are tender. Remove the ginger and onion, and store in glass jar.
