Apple Pie Recipe with Fresh Apples
Description:
Now you can make two dozen individual apple pies in a muffin pan! These pies have a delightfully simple filling in a flaky crust. Great for after-school snacks for hungry kids.
Ingredients:
Crust:
3 ½ cups flour, whole wheat preferably
1 t. salt
1 cup yogurt, plain or vanilla
1 cup butter, melted
Filling:
6 cups apples, peeled, cored, cut into bite-sized chunks
3/4 cup sugar
1 T. ground cinnamon
Instructions:
The day before, mix all the ingredients for the crust. Refrigerate overnight. (This tenderizes the crust).
Preheat oven to 375. Grease two 12-count muffin pans.
In saucepan, cook apples, sugar, and cinnamon over medium heat, until tender (about 10 minutes).
While apples are cooking, roll out 24 circles of dough, press into muffin pans. Spoon the apple mixture into the muffin pans. Bake 30-35 minutes, until crust is brown. Do not overbake.
