Mango Salsa


Description:
This fresh take on salsa is fantastic served over chicken or pork chops. To make it hotter, add more jalapenos, or Serrano peppers. Great served as a dip with tortilla chips.

Ingredients:
3 cups tomatoes, seeded and diced
1 large red onion, diced
6 jalapeno peppers, deeded and diced
3 mangos, peeled and diced
1 cup (packed) fresh cilantro, finely chopped
1 t. sea salt
1 t. ground cumin
1 t. chili powder
½ cup olive oil
2/3 cup lime juice
1 T. hot pepper sauce

Instructions:
Mix all ingredients in a non-metallic bowl. Refrigerate at least one hour, and serve chilled.

Buffalo Chicken Dip


Description:
A zesty dip perfect to serve at parties. This dip is inspired by the famous Buffalo chicken wings, but healthier for you. Serve with celery sticks and crackers.

Ingredients:
2-8 oz packages cream cheese, softened
¾ c. hot pepper sauce
2 ½ cups cooked chicken, diced finely
1 cup Ranch dressing
1 ½ cup finely shredded sharp cheddar cheese

Instructions:
In medium saucepan over medium heat, warm chicken and hot sauce. Add cream cheese and ranch dressing, and cook until warm and well blended, stirring occasionally. Add cheddar cheese, and cook until hot and bubbly, stirring occasionally.
