Huevos Rancheros Recipe
Description:
Traditional breakfast south of the border! Use your favorite salsa and corn tortillas to make a tasty breakfast treat.
Ingredients:
2 cups salsa
Non-stick cooking spray, butter flavored
4 corn tortillas
4 eggs
2 T. fresh cilantro, chopped
Instructions:
Warm the salsa in the microwave, adding salt if needed.
On a griddle sprayed with cooking spray, heat the tortillas about a minute or two on each side. Move to the microwave to keep warm. Spray the griddle again with the cooking spray, and fry the eggs on the griddle.
Spoon a little salsa onto each plate, add a tortilla, top with an egg, pour sauce over both, and sprinkle with cilantro.
Baked French Toast
Description:
This is a great make-ahead breakfast. You can also freeze it after the liquid is absorbed. Just let it thaw overnight in the refrigerator and bake as directed. Yummy!
Ingredients:
1-10 oz loaf French Bread
3 cups milk
¾ t. sea salt
8 large eggs, beaten
4 t. sugar
1 T. vanilla
1 t. cinnamon
2 T. butter, cut into small pieces
Instructions:
Coat a 9×13 inch pan with cooking spray. Cut bread into 1 inch thick cubes, and dump into pan. Mix all remaining ingredients, except butter, and pour over bread. Sprinkle butter over bread. Cover with foil and refrigerate overnight.
To bake—preheat oven to 350. Bake uncovered for 45-50 minutes. Serve with maple syrup.
Hashbrown Breakfast Casserole
Description:
A warm and hearty breakfast casserole made from pantry staples. Mix this up ahead of time and freeze, unbaked. Thaw overnight in the refrigerator and bake for a superb breakfast that never fails to please.
Ingredients:
1 pound sausage, browned and drained
1/3 cup onion, diced
1-32 oz. bag frozen hashbrowns
1 can cream of celery soup
1 can milk
1-8 oz. bag shredded sharp cheddar cheese
Salt and black pepper to taste
Instructions:
Preheat oven to 350. Spray 8”x8” baking dish with non-stick cooking spray. In skillet, brown sausage and onion, breaking up into small pieces. Drain well. Pour into large mixing bowl. Add potatoes, soup, milk, cheese, salt and pepper. Mix well. Spread into prepared pan. Bake 45 minutes. Serves 6.
Breakfast Casserole
Description:
Make this breakfast casserole the night before, then pop into the oven in the morning for a piping hot delicious breakfast. You can also freeze before baking. Simply thaw the casserole overnight in the refrigerator.
Ingredients:
6 cups bread, cut into 1-inch cubes
1 pound ground sausage
½ cup chopped onions
8 large eggs, beaten
1 ½ cups milk
2 cups (8 ounces) sharp cheddar cheese, shredded
Instructions:
Coat 2-quart baking dish with cooking spray. Set aside.
Brown sausage and onion in skillet over medium-high heat. Drain well.
In large mixing bowl, combine bread, sausage, and onions. Mix well.
In a small mixing bowl, beat eggs and milk well. Pour over bread/sausage mixture. Add cheese and mix well. Pour into prepared pan. Refrigerate 8 hours or overnight. (Bread should absorb all liquid.)
Preheat oven to 350. Bake uncovered casserole for 50 minutes or until lightly browned and eggs are set. Serve immediately.
